Ice cream truck drivers should comply with various regulations that ensure they are handling the ice cream in a safe manner. Many states and cities require that those running mobile food services have licenses, including ice cream trucks.

Contact your state's Department of Motor Vehicles, Department of Consumer Affairs and the Health department to determine the licensing requirements for starting an ice cream truck business.

Complete a food manager certification course in localities that require it, such as in the District of Columbia. Those who finish the process receive a certification. You should then get a card that you carry with you during the ice cream truck operation. Obtaining this license often requires that you pay a fee. The card is valid for a certain number of years before you must renew it.

Allow the Department of Health to inspect your ice cream truck. The ice cream should remain cold, so the refrigerator should be sized properly to ensure the ice cream products do not melt. Some companies specialize in designing particular ice cream trucks.

Finish a vending application. The form should be filled out as much as possible and brought to the inspector during inspection of the vending unit. The application will let the inspector know necessary information about the vending unit, hours of operation and contact information.

Use a depot devoted to your ice cream vending operation. The depot serves as a location to assist you in every other aspect of the business such as storing food, allowing you to perform repairs and cleaning all utensils.
