How to Keep Caramels From Getting Hard When Making Turtles
Caramel is a versatile ingredient in a number of sweet desserts. Caramel sauce can be made to be used as a topping for ice cream, popcorn, apples, or pancakes. Caramels can be melted and added to other desserts, such as cheesecakes and brownies. Caramel is also an integral ingredient in turtles, which are a chewy, chocolate-covered nut confection. Things You'll Need
- Stainless steel or glass bowl
- Small pot
- Whisk or fork
- Corn syrup (optional)

Add the melted caramel to a stainless steel or glass bowl.

Place a pot of water on the stove set the burner to high heat. Bring the pot of water to a rolling boil.

Turn the burner down to medium and bring the water down to a simmer.

Place the bowl with the melted caramel on top of the pot. Stir occasionally with a whisk or fork.

Replace the water if it starts to boil away. Leave the bowl on top of the boiling water until ready to use.

Add a small amount of corn syrup to the melted caramel to keep it from crystallizing. Use a teaspoon of corn syrup per cup of melted caramel.
