How to Cut the Eyes in Ornamental Sweet Potatoes
Native to Central America, the sweet potato comes in several varieties, including the Japanese sweet, red garnet and ornamental. Ornamental sweet potatoes are primarily grown for their colorful vines that grow above the tuber vegetable. While ornamental sweet potatoes may be eaten, their bitter taste can seem unappetizing to some. Process the sweet potato as you would for most other tubers, including russet potatoes, fingerlings and standard sweet potatoes. Does this Spark an idea?

Rinse and scrub the potatoes gently, being careful not to tear the skin.

Insert the pointed, curved end of a vegetable peeler into the potato, outlining the eye you are removing.

Rotate the peeler around the eye to create a cut outline around it.

Push down on the other end of the peeler to pop out the eye of the potato.

Continue removing all of the sweet potato eyes in the same manner.
