      Check to ensure that the power to the fryer is on, and that the gas supply is on if the unit isn’t producing any heat. Phone for service if you notice loose or dirty wires that may be contributing to the problem.

      Check the temperature control to ensure it is set properly for the food you’re cooking, if the fryer is putting out too much heat.

      Turn up the temperature of the unit to warm the shortening if it has cooled and the tank isn’t draining properly. Check to make sure the drainpipe isn’t clogged with fat or other debris.
