Place a frosted or fondant-covered wedding cake in front of you. Layer a paper stencil at the top center of the cake. Select a stencil that compliments the style you're wanting to achieve.

Fill in the stencil with your choice of gel icing. Since you're using fresh rose petals as the focus, a stenciled design of green gel vines is ideal for a fresh look.

Place each individual rose petal on the top center of the cake in a pleasing design around the gel icing design.

Place random rose petals down the side layers of the cake for a cascading look.

Cover the cake with a dome lid and refrigerate until it's ready to serve. This keeps the rose petals fresh and vibrant in color.
