Iron the napkins with or without starch. Starch is optional, but it makes the napkins easier to fold and results in a crisper, more defined fan shape. If you prefer not to use starch, dampen the napkins with a spray bottle of water or iron them while still damp from laundering. Use a medium to hot setting, iron the wrong side first and don't iron the right side of dark linens at all.

Lay a napkin face down in front of you.

Fold the napkin in half.

Orient the folded napkin vertically to your body, so the open end faces to one side.

Accordion fold the napkin down its entire length in 1-inch segments. In an accordion fold, each fold goes the opposite direction from the previous fold.

Place one end of the folded napkin into a wine glass. If the glass is a shallow goblet, fold the end over on itself about an inch and place the folded end into the glass. Let the other end of the napkin fall open to reveal the fan shape.
