How to Make Seven-Minute Frosting

Why don't they rename seven-minute frosting to 25-minute frosting, since that's how long it really takes? Who knows. Another one of the world's mysteries. But this classic recipe yields enough to frost the tops and sides of two 8-inch or 9-inch cake layers, or one 10-inch tube cake. Does this Spark an idea?

  • 1 1/2 c. sugars
  • 1/4 tsp. cream of tartar
  • 1 tsp. vanilla
  • double boilers

Instructions

    • 1

      Combine sugar, 1/3 c. cold water, egg whites and cream of tartar in the top of a double boiler. (Don't put the mixture on the stove yet.)

      Beat mixture at low speed for 30 seconds.

      Place over boiling water and cook, beating constantly at high speed, about 7 minutes, or until stiff peaks form.

      Remove frosting from heat. Beat 2 to 3 minutes more, or until frosting is spreadable.

      Use immediately.
