How to Make Chocolate Banana Cookies

The only thing better than these are bananas dipped in chocolate and then frozen. But those are cold and these are cozy warm. Yields 2 dozen small cookies. Does this Spark an idea?

  • 1 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup sliced rip banana
  • 1/3 cup softened butter
  • 1 egg
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/3 cup semisweet chocolate chips

Instructions

    • 1

      Preheat oven to 400 degrees F. Grease cookie sheets.

      Melt chocolate in the top of a double boiler. Set aside to cool a few minutes.

      Combine sugar, butter, banana and chocolate in a large bowl. Beat with a hand mixer until fluffy.

      Add egg and blend well.

    • 5

      Add flour, baking powder, baking soda and salt. Mix well.

      Drop by heaping teaspoonfuls onto the cookie sheets and bake 5 to 8 minutes or until the cookies are set.

      Cool cookies 1 minute while still on the cookie sheets and then transfer to a wire rack to cool thoroughly.

Tips & Warnings

  • When melting chocolate, take care that the water in the double boiler is hot but not boiling, and don't let any water get in the chocolate, or it will stiffen. (Don't cover the chocolate to get it to melt faster, either, as condensation will drip into it.)

  • The chocolate should cool slightly after you melt it, so that by the time you mix it and then add the egg, you don't get scrambled egg in your chocolate.

  • If baking above 3,500 feet, increase flour to 1 1/3 c. and bake as directed.

  • Very, very ripe bananas produce the best cookies in this recipe.

    These are great. Really easy and faster than waiting for Banana Bread in the morning. I just added choc chips straight to the receipe, skipping the hassle of the double boiler and they are awesome! Yum. Crispy in the edges and chewy in the middle.
