How to Make Cold Roast Beef

Cold roast beef fillet is a good dish to serve at parties. For an elegant display, slice fillet crosswise, arrange it on a cutting board or platter, and garnish with parsley. Serves eight.

Things You'll Need:

  • meat thermometers
  • trimmed 3 to 3 1/2 lb. fillets of beef
  • oiled roasting pans
  • Trimmed 3 To 3 1/2 Lb. Fillets Of Beef
  • Meat Thermometers
  • Oiled Roasting Pans
  1. Step 1

    Preheat the oven to 500 degrees F.

  2. Step 2

    Pat dry fillet, and season it with salt and pepper.

  3. Step 3

    In an oiled roasting pan, roast fillet for 20 to 25 minutes, or until a meat thermometer registers 130 degrees F (for medium-rare meat).

  4. Step 4

    Allow to cool to room temperature.

  • You can roast the fillet two days in advance and keep it wrapped and chilled.
