How to Make Garlic and Potato Soup

This simple soup is a satisfying winter warmer. Makes two servings.

Things You'll Need

• 3 large garlic cloves
• 1 lb. red potatoes
• 1/2 cup thinly sliced scallion greens
• 1 tbsp. vegetable oil
• 4 cups water
• Groceries
• Chef's Knives
• A Heavy Saucepans
• Cutting Boards
• Small Food Processor Or Blenders

Instructions

1. Finely chop garlic and cut potatoes into ½-inch pieces.

2. Warm oil in a heavy saucepan over moderate heat.

3. Cook garlic and potatoes, stirring occasionally, until pale golden (the potatoes will not be cooked). Don't let the garlic burn.

4. Add water and salt to taste.

5. Simmer for 20 minutes, or until potatoes are very soft.

6. Puree soup in blender or food processor until smooth and reheat.

7. Stir in thinly sliced scallions and salt and pepper to taste.

Tips & Warnings

• Consider garnishing with a sprig of parsley.
