How to Make Garlic and Potato Soup

This simple soup is a satisfying winter warmer. Makes two servings.

Instructions

Difficulty: Easy

Things You’ll Need:

  • Groceries
  • Chef's Knives
  • A Heavy Saucepans
  • Cutting Boards
  • Small Food Processor Or Blenders
  • 3 large garlic cloves
  • 1 lb. red potatoes
  • 1/2 cup thinly sliced scallion greens
  • 1 tbsp. vegetable oil
  • 4 cups water

Step1
Finely chop garlic and cut potatoes into ½-inch pieces.
Step2
Warm oil in a heavy saucepan over moderate heat.
Step3
Cook garlic and potatoes, stirring occasionally, until pale golden (the potatoes will not be cooked). Don't let the garlic burn.
Step4
Add water and salt to taste.
Step5
Simmer for 20 minutes, or until potatoes are very soft.
Step6
Puree soup in blender or food processor until smooth and reheat.
Step7
Stir in thinly sliced scallions and salt and pepper to taste.

Tips & Warnings

  • Consider garnishing with a sprig of parsley.
