How to Make Cucumber Horseradish Sauce
This sauce is excellent on cold roast beef. Makes about 1 1/2 cups.

- 2 tsp. fresh tarragon leaves
- medium bowls
- 3/4 cup sour cream
- 1 large cucumbers
- 1 tbsp. white wine vinegars
- wire whisks
- 3 tbsp. drained bottled horseradish

Peel, seed and dice cucumber.

Mince tarragon.

Whisk together cucumber, sour cream, horseradish, vinegar, minced tarragon, salt and pepper to taste in a bowl.

Chill covered for at least 2 hours.
