How to Make Cucumber Horseradish Sauce

This sauce is excellent on cold roast beef. Makes about 1 1/2 cups. Does this Spark an idea?

2 tsp. fresh tarragon leaves
medium bowls
3/4 cup sour cream
1 large cucumbers
1 tbsp. white wine vinegars
wire whisks
3 tbsp. drained bottled horseradish

Instructions

  Peel, seed and dice cucumber.

  Mince tarragon.
- 3
  
  Whisk together cucumber, sour cream, horseradish, vinegar, minced tarragon, salt and pepper to taste in a bowl.

  Chill covered for at least 2 hours.

  Garnish with a tarragon sprig.
