Things You'll Need:
- 2 3/4 cups warm water
- 4 tsp. salt
- 6 cups flour
- 1/3 cup lard - plus more for patting the dough

Step 1
In a large bowl, mix the flour and salt together really well. Using your hands, mix the lard with the flour and salt until it is completely incorporated.

Add warm water a small amount at a time, mixing frequently with your hands. When you've obtained a soft, non-sticky dough, knead for another 8 to 10 minutes.

Pat the ball of dough lightly with the lard and let sit for 15 minutes. Divide the dough into 24 balls of equal size.

Pat each ball of dough lightly with lard and let sit for 30 minutes.

Heat a cast-iron griddle or large skillet over medium heat.

Place a ball of dough on a floured work surface. Using a rolling pin, roll the dough out in as thin a circle as you can get.

Put the circle of dough on the hot pan. Let it get small brown spots on each side and then place in a folded kitchen towel to keep warm.

Repeat with remaining balls of dough.

on 8/11/2007 This is a good, traditional recipe, as it uses lard. I've found flour tortillas just don't taste the same without using lard. Thanks for this!
