How to Make New Orleans Breakfast Fritters

These light, orange-scented fritters are heavenly with coffee in the morning. If you're handy with a fryer and have some leftover rice, you can make them quickly, too. Serves four to six people.

Difficulty: Moderate
Instructions

Things You'll Need:

  • 2 cups biscuit mix
  • 1/8 tsp. ground cinnamon
  • 1 egg
  • 1/2 tsp. ground nutmeg
  • 6 tsp. grated orange peel (divided)
  • 1 cup cooked rice
  • 1 1/3 c. sugar (divided)
  • 1 tsp. vanilla
  • 4 cups vegetable oil
  • 1/3 cup water
  • Groceries
  • Deep-fat Fryers
  • Deep-frying Thermometers
  • Mixing Bowls
  • Mixing Spatulas
  • Zesters
  • Mixing bowls
  1. Step 1

    Heat 2 inches of oil to 375 degrees F. in a large pot or deep-fat fryer.

  2. Step 2

    Mix biscuit mix, rice, 1/3 c. sugar, 2 tsp. grated orange peel, nutmeg and cinnamon in a bowl.

  3. Step 3

    Stir in water, slightly beaten egg and vanilla until batter thickens.

  4. Step 4

    Mix 1 c. sugar and 4 tsp. grated orange peel in another bowl. Set aside.

  5. Step 5

    Drop batter by rounded teaspoonfuls into hot oil.

  6. Step 6

    Fry fritters for about 2 minutes on each side, until golden brown.

  7. Step 7

    Roll fritters in sugar/orange peel mixture.

  8. Step 8

    Serve warm.

Tips & Warnings
  • Check the oil temperature with a frying thermometer.
