These cookies are for the white chocolate fan. (Be a little cautious when serving them to confirmed chocoholics - "real" chocolate lovers can sometimes get testy when presented with white chocolate.) Buy the highest-quality white chocolate you can for this recipe. Makes about 35 cookies.

  • Measuring cups
  • 1/4 tsp. salt
  • 1 1/2 c. granulated sugar
  • 2/3 c. light brown sugar
  • 1 1/2 c. softened unsalted butters
  • 1 c. macadamia nuts
  • 1 c. white chocolate - cut in chunks
  • 1 tsp. vanilla extract
  • 2 eggs
  • 1 tsp. baking soda
  • 2 1/2 c. all-purpose flour
  1. Step 1

Heat the oven to 325 degrees F.

  2. Step 2

Beat the butter, sugar and brown sugar until light and creamy.

  3. Step 3

Meanwhile, stir together the flour, baking soda and salt.

  4. Step 4

When the butter is creamy, add the eggs one at a time, then the vanilla.

  5. Step 5

Add the flour mixture slowly, and when it is almost all incorporated, add the macadamia nuts and white chocolate.

  6. Step 6

    Stir together well.

  7. Step 7

Drop tablespoon-sized rounds on cookie sheets and bake for 15 minutes, or until edges just start to turn golden.

  8. Step 8

Remove the cookies from the cookie sheets to cool so the white chocolate doesn't melt too much.

Tips & Warnings
  • White chocolate is not technically real chocolate, because it doesn't contain any cocoa solids. White chocolate is a mixture of cocoa butter, dairy solids, vanilla and sugar. Unfortunately, many white chocolates on the market don't contain any cocoa butter; for this recipe, use only those that do.

on 2/25/2009 These cookies were served in the break room of a trucking company. The cookies disappeared and there was nary a crumb left. Must have been good, eh? ;) This recipe is a good alternative to "traditional" chocolate chip cookies.
