Buttercream frosting is classic wedding cake frosting; it's sweet, easy to work with and color, and less expensive than other types of frosting. A buttercream and rose wedding cake is a classic design that can be utilized any time of year for many types of theme weddings.       Take the cake out of the freezer if applicable and allow it to thaw all night, covered, on a kitchen countertop or table. Once completely thawed, frost each tier with a crumb coat layer, or simply a layer of frosting, with a spatula. This is the "base" frosting for your cake and therefore does not need to look pretty. Cover the cake once more.

      Frost the cake a few hours or days later with buttercream frosting using a spatula. Apply the frosting evenly to each tier, then smooth the frosting out using paper towels in a circular motion. Do this until each tier appears smooth.

      Decorate the cake with roses as desired. There are many options for rose cake decoration, such as roses made from fondant, silk roses or real cut roses. Whatever you decide to decorate with, also determine how you would like to display the roses, such as a bunch on one side of each tier, roses all the way around each tier and roses on alternate tiers. You can also choose to incorporate other elements with the roses, such as faux greenery.

      Keep the cake completely out of the sun, as buttercream frosting melts easily. If the cake is being used for a spring or summer wedding, keep it refrigerated until you need it, and do not set the cake outdoors.

Tips & Warnings

  • Make buttercream with shortening instead of butter during summer months, as shortening-based buttercream frosting holds better than butter-based frosting.

  • Buttercream frosting dries quickly and forms a gritty crust. Prevent this by keeping a damp cloth over your frosting bowl.
