Fish and citrus are already a common pairing; many people like to squeeze a lemon wedge over a fish fillet. But adding white chocolate to the mixture introduces a rich flavor to complement the natural fattiness of salmon. Things You'll Need

  • Olive oil
  • Tongs
  • 1 tbsp. butter
  • Saucepan
  • Whisk
  • 1 tbsp. flour
  • 1/4 cup fish stock
  • 1/4 cup white wine
  • 2 oz. chopped white chocolate
  • 1 tbsp. lemon juice

Instructions

      Rub two 4 to 6 oz. salmon fillets with olive oil on both sides.

      Grill the salmon over medium-high heat for three to four minutes per side or until it flakes easily and has cooked through. Remove the fish from the grill with tongs and set aside.

      Melt 1 tbsp. of butter in a saucepan over medium heat. Whisk 1 tbsp. of flour into the butter, and cook the mixture for 30 seconds, before it begins to brown.

      Add 1/4 cup of fish stock and 1/4 cup of white wine to the flour and butter, and heat them over low heat for 10 to 15 minutes or until slightly thickened. Remove the sauce from the heat.

      Stir in 2 oz. of chopped white chocolate and 1 tbsp. lemon juice into the sauce mixture.

      Pour the white chocolate and lemon sauce over the grilled salmon and serve immediately.

Tips & Warnings

  • Peel a chunk of white chocolate with a vegetable peeler to make chocolate curls for garnishing the dish.

  • Replace white wine with 1/4 cup of fish stock, if desired.
