How to Preserve Ginger in the Refrigerator
Ginger is a root spice that is used for both culinary and medical purposes throughout the world. Ginger is an important part of ethnic cooking, forming the base of many curry powders. It is featured in salads, pickles and chutney. In the West, ginger is used most frequently in cakes, biscuits, jam and alcohol. The natural healing properties of ginger are also well documented and the consumption of ginger is prescribed for nausea, digestive problems and pain management. Wrap your ginger in a paper towel to provide a layer of protection from other smells in your refrigerator.

Place the ginger into a resealable plastic bag. Squeeze out any air trapped inside the bag.

Place the bag in the salad drawer of your refrigerator for up to three months. Wrap the ginger in a paper towel and return it to the bag each time you use it.

Pour dry sherry into a glass jar until it is three-fourths full.

Peel any remaining ginger with a vegetable peeler.

Place the peeled ginger into the jar and screw the lid on tightly.

Place the jar on the top shelf of your refrigerator. Your ginger will be preserved for a further two months. Replace the lid tightly following each use.

Tips & Warnings
Allowing air to remain in the resealable plastic bag may cause the ginger to disintegrate faster.
