Instructions

    • 1

Mix 1 cup butter and 1 cup sugar until creamy. Add 1 egg, 1 tbsp. vanilla and 1/2 tsp. salt and stir well.

    • 2

Slowly add in 2 3/4 cups of flour and mix thoroughly.

    • 3

Roll the dough into a 2-inch thick tube. If you want bigger cookies, you can make it 3 inches in diameter.

    • 4

Wrap in parchment paper and freeze for 30 minutes to chill.

    • 5

Remove the dough from the freezer and slice into circles. The circles should be about 1/8 inch thick.

    • 6

Set on baking sheets and bake for 10 minutes at 350 degrees. Let the cookies cool on racks while you mix the peanut butter filling.

    • 7

Mix 1 cup smooth peanut butter and 1 1/4 cup powdered sugar together in a bowl.

    • 8

Spread a small amount of peanut butter mixture onto each cookie with a butter knife. You want the peanut butter to be about 1/8 inch thick and don't spread it all the way to the edge of the cookie.

    • 9

Put 4 cups chocolate chips in a microwave safe bowl and heat in the microwave for one minute. Stir the chocolate well. Return them to the microwave for another minute and then stir again. Keep repeating this process until the chocolate is fully melted.

    • 10

Dip each cookie in the chocolate, fully coating all sides of the cookie and peanut butter.

    • 11

Set each cookie on parchment paper to cool. Put the cookies in the freezer to harden faster. Once the cookies have set, they are ready to eat.
