Piping gel is used by bakers on cakes and cookies to write messages or draw different designs. Because it has a gel-like consistency, it will not run into the rest of the design. You can purchase premade piping gel at craft or baking stores or make your own with a few ingredients. Add color to the piping gel to get the perfect decorations for your goodies. Things You'll Need

  • 1/3 cup sugar
  • 1 tbsp. cornflour
  • 1/4 cup lemon juice
  • 1/4 cup water
  • Pot
  • Spoon
  • Measuring cup
  • Food coloring
  • 2 tbsp. water
  • 2 packages unflavored gelatin
  • 2 cups white corn syrup

Instructions

  1. Lemon Juice Piping Gel

      Mix the sugar and cornflour together in a pot.

      Add lemon juice slowly over high heat. Stir constantly.

      Add the water while still stirring. Add a few drops of food coloring at this point, as well.

      Continue cooking and stirring until the mixture comes to a boil and thickens. Cook until it is a gel consistency.

      Allow to cool completely before using. Store any leftovers in the refrigerator.

    Gelatin Piping Gel

      Pour 2 tbsp. water into a saucepan. The water should be cold, as well as the saucepan. Sprinkle the gelatin on top and allow it to sit five minutes.

      Turn the burner to low and allow the gelatin to dissolve. Stir occasionally to remove lumps.

      Pour in the corn syrup and continue heating over a low heat. Heat until the entire mixture is hot throughout.

      Add a few drops of food coloring to reach your desired color.

      Allow to cool before using. Store in the refrigerator.

Tips & Warnings

  • These piping gels keep in the refrigerator for several months. Allow the gels to reach room temperature before using; add a few drops of water if it seems too thick.
