Cold bananas stay firm longer.

Bananas are a good source of vitamin C and a source of small amounts of potassium, magnesium and B vitamins. Vitamin B6 in particular is plentiful in fresh bananas. When bananas are stored at cold temperatures, the ripening process is stalled and the fruit stays firm, but the skin will turn black. This is not a problem; you just need to be aware that black bananas have not gone bad. Does this Spark an idea?

      Set the bananas on a countertop at room temperature and leave until they have ripened to the desired point. Once you refrigerate the bananas, they won't continue to ripen. So, if you have green bananas, let them ripen first.

      Place the bananas in a crisper in the refrigerator.

      Store the bananas in the refrigerator for two to three weeks. Remember that the skin will be black, but the banana inside will be firm and fresh.
