How to Cook a Beef Roast in a Roaster Pan
Slow cooking a beef roast in a roaster pan yields meat that is evenly cooked throughout. When done properly, pan-roasted beef is also tender and juicy. Not a lot of prep work, or hands-on cooking, goes into this method of pan roasting. Things You'll Need
- Roasting pan with rack
- Aluminum foil
- Knife
- Salt
- Pepper
- Vegetable oil
- Meat brush
- Meat thermometer

Remove your beef roast from the refrigerator about 1 to 2 hours before you plan on cooking it. Warming it up to room temperature before cooking it helps it cook more evenly.

Preheat your oven to 250 degrees Fahrenheit. Prepare your roasting pan by creating a aluminum foil tray to sit beneath the rack and catch the drippings from your roast.

Score the layer of fat on your beef roast with a knife. Rub the surface of your roast with salt and pepper. Brush a coating of vegetable oil across the entire surface of the meat.

Reduce your oven temperature to 200 degrees Fahrenheit and put your roasting pan in the oven on the center oven rack.

Check the temperature of your roast at least once every hour. Insert a meat thermometer into the center portion of your roast to get an accurate reading. When the internal temperature is 118 degrees Fahrenheit, turn the temperature of your oven up to 500 degrees Fahrenheit. Depending on the size of your roast, it should take between 4 to 6 hours to reach 118 degrees internally.

Allow your roast to cook for an additional 15 to 20 minutes at 500 degrees Fahrenheit. Check the internal temperature again, as a beef roast should have an internal temperature of 145 degrees before you remove it from the oven in order for it to be safe for consumption. Continue to check the temperature every 5 minutes until it reaches the safe temperature.

Allow your beef roast to rest outside the oven for 20 minutes before you slice and serve it.
