A Gyro is a traditional Greek dish that consists of meat, usually lamb or beef, wrapped in a pita and served with tomatoes, cucumber and tsatsiki sauce. Although gyros are commonly made of ground meat slow roasted on a revolving spit, it is possible to make a delicious alternative on your grill at home. Does this Spark an idea?

Things You'll Need

  • 1 lb. beef or lamb (makes six gyros)
  • Salt and pepper (for beef)
  • Lemon juice (for lamb)
  • Wooden skewers
  • Aluminum foil
  • Meat thermometer

Instructions

      Cut the meat into half-inch strips and season with spices of your choosing. For example, spice lamb with lemon juice or beef with salt and pepper.

      Preheat your grill to high. The gyros cook extremely quickly, and it is important to sear the flavor inside the meat.

      Fill your skewers with the cut and seasoned strips. Slide the slices from the top the bottom of the skewer. One pound of meat will make around six skewers.

      Lay a sheet of aluminum foil on your grill. This will protect the thin meat from burning and the wooden skewers from igniting.

      Grill the skewers for 10 minutes, flipping occasionally for an even sear on both sides.

      Stick a meat thermometer into one piece of meat. When the temperature is between 165 and 170 degrees take the meat off of the grill and allow it to rest for a few moments.

      Slide the meat off of the skewers with tongs. Stack the meat onto pita bread with your favorite sauces and vegetables and enjoy.

Tips & Warnings

  • Soak your wooden skewers overnight in a bowl of water. This will prevent them from catching on fire while on the grill.
