How to Melt Chocolate on a Stove Top
Chocolate is consumed by more than 1 billion people day and can be prepared in numerous ways. If you plan to melt it on a stove top, you should use a double boiler. The double boiler's indirect heat method will keep chocolate from melting too fast. You must keep the moisture out of the melting chocolate, and keep the boiler on a low temperature. Chop the chocolate into smaller pieces, or use chocolate chips.

Fill the lower pan of the double boiler with 1 inch of water. Do not let the water touch the bottom of the upper pan.

Heat the water over medium-low to medium heat. Do not let it come to a boil.
Melting

Place the chocolate into the upper pan of the double boiler.

Stir the chocolate with a heat resistant spoon or spatula once the chocolate begins to melt.

Remove the top pan of the double broiler once the chocolate is almost completely melted. This will take roughly 10 minutes depending on the quality of the chocolate. Continue to stir. Any unmelted chocolate will be heated by the surrounding chocolate.

Tips & Warnings
Wear oven mitts when working with a hot pan.
Never cover the top pan of the double boiler when it contains chocolate. Any steam can gather underneath the lead and moisture can drop into the chocolate. That will cause the chocolate to become grainy and lumpy.
