Green mint squash is a delicious summer treat and even better when available in the dead of winter. Whether you grow the squash yourself or just pick them at the local farmers market, you can preserve the harvest to consume further ahead. Does this Spark an idea?

Things You'll Need

  • Squash
  • Knife
  • Cutting board
  • Pan
  • Mint leaves
  • Water
  • Bowl with ice
  • Colander or
  • Slotted spoon
  • Freezer bags or vacuum sealer

Instructions

      Select young squash around four inches long for the best flavor. Wash completely and slice into 1/2-inch slices. Discard the ends of the squash.

      Fill a pot 2/3 full of hot water and turn on high heat. Add mint leaves to the water and let boil. The squash will be infused by the flavor of the herbs. Place the sliced squash in the boiling water and allow to boil for three minutes. Set aside a bowl filled with ice.

      Remove the squash from the boiling water using a slotted spoon or colander. Place in ice cold water for five minutes.

      Place the squash inside a freezer bag, seal and freeze. To enhance the mint flavor, you can also add the boiled mint leaves to the freezer bag.

      Remove the bag from the freezer when you are ready to eat the squash and allow it to thaw. You can steam the squash or eat chilled with salt and pepper to taste.

Tips & Warnings

  • To avoid freezer burn, use a home vacuum system that will seal out air and moisture and then place the squash directly in the freezer after processing. Harvest squash at its peak maturity when the vegetable is hard, not limp.

  • Make sure to wash squash thoroughly to remove any chemicals or pesticides. Squash will keep up to four days in a refrigerator but should not be washed until you are ready to preserve.
