How to Flavor Gelatin

Gelatin is manufactured from animal connective tissue. This tissue is found in various cartilage parts of animals. The pieces are used because of their high quantity of hydroxyproline and proline, which can become the consistency of jelly once processed in water. In its purest form, gelatin is rather plain and brittle. It is then combined with ingredients that give it flavor and elasticity. Gelatin can be flavored with liquid or powder.
