How to Cook Corn and Spinach Pinoy Style
Pinoy style relates to Filipino cooking techniques. Corn and spinach are popular ingredients in Filipino soup recipes, and corn is a staple crop of the Philippines. Usually, white corn and spinach are cooked together in a soup. According to "Overseas Pinoy Cooking," use the traditional sticky white corn for the recommended consistency in the soup. Although there are several variations for cooking corn and spinach Pinoy style, the main ingredients and flavors are steadfast. Does this Spark an idea?
Things You'll Need
- 3 cobs of white corn
- Chopping knife
- Bowl
- Sauce pan
- 5 to 7 garlic cloves
- 1 onion
- 1 tomato
- 250 g chopped pork
- 250 g peeled shrimp
- 1/4 cup fish sauce
- 3 to 4 cups water
- 1 can creamed corn
- 3 green chiles
- Salt and pepper to taste
- 1 lb. spinach

Cut off corn kernels from the three cobs with a chopping knife. Throw away the cobs, and set aside the kernels in a bowl.

Saute the garlic cloves, onion and tomato in a large sauce pan until agglomerated.

Combine the pork and shrimp with the cloves, onion and tomato.

Stir in the fish sauce, and allow the ingredients to cook together for a few minutes.

Pour 3 to 4 cups water into the pan. Once the water boils, let the soup simmer for a few minutes.

Blend the corn with the ingredients in the pan. Simmer the soup for 30 minutes.

Add the can of creamed corn, and continue to simmer no longer than 15 minutes.

Add more chiles for a spicier soup. Place the whole chiles into the pan, and cook for another two minutes.

Season the soup with salt and pepper to your preferred taste.

Add the spinach, but only cook it for only 30 seconds to avoid wilted leaves.

Tips & Warnings
The pork and shrimp are optional and interchangeable ingredients.
Creamed corn is optional, but it gives the soup a creamy texture.
Fish sauce can be substituted for clam sauce.
Serve the soup hot.
