How to Buy Zucchini
Zucchini, a green variety of squash, grows on a vine on the ground and is easy to find in season in North America year-round. There are myriad uses for zucchini -- both raw and cooked. Small raw slices or chunks accompany salad well, while zucchini spears roast quickly. It's also one of the most commonly grilled vegetables. Some intrepid cooks even julienne zucchini to use as a base for fritters. Check for several qualities when buying zucchini. Does this Spark an idea?

Examine only zucchini that sits in an open, lit area. Zucchini that gets pushed into the back of a dark, wet and dirty produce case will probably be slimy.

Look at the color. There will likely be variation with some areas lighter or darker but, overall, quality zucchini should a be dark and vibrant green.

Check for firmness. Don't consider a zucchini with any soft spots. The skin should also be firm -- wrinkles are a sign of lost moisture.

Find a zucchini with smooth skin. Zucchini resemble cucumbers, which have small bumps. But zucchini should be entirely smooth, even contoured to the touch.

Be realistic about blemishes. Ideally, you want a zucchini without any scratches or nicks on its surface, which may be hard to come by -- especially in a supermarket. While little scratches are acceptable, dents or serious abrasions are not. Check any scratches to make sure there is no dirt or sign of softening.
