Grouper fish belong to the sea bass family. Once the fish are caught, they are cleaned and filleted. After filleting the fish, the skin needs removed from the fish so that it cooks properly. Removing the skin from the fish may seem challenging, but it will separate from the flesh easily with a sharp knife. Once you remove the skin, cook the fish using your preferred method. Instructions

      Sit the grouper fillet onto a cutting board with the skin side down. Place the fish with the tail toward you because you will make the first cut at this end.

      Cut into the fish at the tail end. Do not cut all the way through the grouper. Cutting into the skin allows you to see where the skin meets the flesh. Hold the knife at a slight angle and cut until you separate a small section of the skin from the flesh.

      Hold the knife so that it lays parallel and flat with the cutting board. The sharp side of the knife needs to face toward the head.

      Push on the knife to slide it between the skin and meat. Continue to remove the skin from the flesh slowly and hold onto the tail securely to keep the fillet in place. Keep cutting until your reach the head of the fish.

      Cut the skin off the grouper by holding the sharp end of the knife away from the body. Remove the cut skin from the flesh. Wash and prepare the flesh as desired.

Tips & Warnings

  • Always hold the knife at a slight angle away from the flesh to prevent cutting into it.
