When you think of baking a cake, you probably envision it rising and baking for 30 minutes or more in an oven. However, it is entirely possible to cut that time in half by cooking it in the microwave. The microwave is not intended for baking, and you should not try to cook a traditional cake recipe in one. Cooks can formulate cake recipes for microwave preparation, though. Mississippi mud pie recipes vary in form. Some are true pies, while others are cake. You can prepare a cake version of the dish in a microwave. Things You'll Need

  • 1 1/2 cups unsalted butter
  • 3/4 cup cocoa powder
  • 2 cups granulated sugar
  • 4 eggs
  • 1 1/2 cups all-purpose flour
  • 1/4 tsp. salt
  • 3 tsp. vanilla
  • 1 cup mini marshmallows
  • 1/3 cup milk
  • Box of powdered sugar
  • 3 glass casserole dishes (2 qt., 2.5 qt., and 12x8 in size)

Instructions

  1. The Cake

    • 1

      Soften the butter by leaving it on the counter until it is room temperature.

      Add 1 cup butter and 1/2 cup cocoa powder to a 2.5-qt. glass casserole dish. Stir the ingredients with a wooden spoon or electric mixer.

      Microwave the mixture on full power for two minutes.

      Remove the bowl from the microwave. Add granulated sugar. Stir to incorporate it into the chocolate butter mixture.

      Add four eggs. Mix the contents of the bowl until you no longer see any unincorporated egg.

      Add the flour, 2 tsp. vanilla and salt to the batter. Mix the batter thoroughly.

      Pour the batter into a 12x8 glass baking dish.

      Place the baking dish in the microwave. Cook on full power for five minutes.

      Rotate the dish a half turn. Cook for another five minutes.

      Add marshmallows to the top of the cake. Leave the cake in the dish to cool.

    The Icing

      Mix 1/2 cup butter, 1/4 cup cocoa, and milk in a 2-qt. glass casserole dish.

      Microwave the mixture on full power for two minutes.

      Remove from the microwave. Add 1 tsp. vanilla and powdered sugar. Stir until the mixture is even and smooth.

      Spread on top of the cake while both are warm.
