How to Make a Sugar Paste Tulipan
"Tulipan" is a French word for a tulip. Some French tulips have fluted or fringed edges; others have straight edges like traditional tulips. You can make your sugar paste tulipan flowers with either kind of petal. Prepare the tulipan flowers at least 24 hours before using them so that the paste has plenty of time to dry before you decorate the cake. Make several practice tulips to get the technique down before starting on the tulips you will use with the dessert. Does this Spark an idea?

- Craft wire
- Scissors
- Egg white
- Cornmeal
- Wax paper
- Green sugar paste
- Sharp knife
- 6 teaspoons
- 6 dinner spoons
- Floral tape

Cut a craft wire piece 2 to 3 inches long. Bend the top third of the wire to make a narrow loop. Dip the wire loop in egg white and then dip the loop into cornmeal.These coated wires will form the anthers of the tulipan flower. Place them onto a sheet of wax paper and allow them to dry.

Cut an 18-inch piece of craft wire. Coat the top 3 inches of wire in green sugar paste to make the pistil of the tulipan. Set the pistil aside.

Roll some sugar paste flat to a thickness of about 1/4 inch. Cut the sugar paste into oval petal shapes with a sharp knife. Make six large petal shapes and six small petal shapes. Insert a 6-inch piece of craft wire into the base of each petal. Place the large petals inside dinner spoons and the small petals inside teaspoons to dry overnight. This will give the petals a rounded shape.

Wrap the uncoated part of the anthers around the pistil flower stem. Alternating between large and small petals, position the tulip petals around the pistil stem and hold them in place with floral tape. Use about four large and four small petals per tulipan flower.

Attach the tulipan flowers onto the cake or dessert by poking them into place with the pistil wire.
