    Understanding Airbrushing

  1. Airbrushing uses compressed air to blow paint in a fine mist onto a surface. Air compressors and special air guns are used for this technique.
  2. The Surface

  3. To prepare a cake, it should be covered with a smooth surface of icing or fondant. This gives the airbrushing a nice canvas to adhere to. A design is usually sketched onto the surface. Stencils can also be used as a guide for the shapes needed to complete the painting.
  4. The Paint

  5. Cake airbrushing is done with a special type of edible paint. This paint is made from a special type of food coloring that is thin enough to travel through the airbrush without clogging it. The airbrush is held at a 45-degree angle, around 8 inches from the cake, while the paint is sprayed evenly over the surface. This gives the cake coloring a soft look that can't be matched with any other type of cake decorating.
