Genes influence a person's rate of aging. So do free radicals, which are molecules with unpaired electrons produced by the body to fight germs. Free radicals contain two atoms.
While free radicals can be helpful, free radicals can also damage one's health.Free radicals are unstable and can become harmful to the body after the atoms separate.
When separated, the atoms will attempt to pick an electron from a nearby molecule. That molecule then becomes a free radical and causes damage to cells and accelerates the rate of aging.
Fortunately, our body produces antioxidants that can neutralize and stabilize free radicals. We can also combat free radicals by eating foods that contain antioxidants, such as oil. Oil also contains fatty acids vital to one's health, including skin cells.

While aging is inevitable, oil can slow the process and keep a person healthy. Some oils contain polyphenols, which are antioxidants. Polyphenols have been found to slow the process of aging and help prevent degenerative diseases, including cardiovascular diseases and cancer.

Why Polyphenols Work

According to Augustin Scalbert, Ian T Johnson and Mike Saltmarsh, polyphenols are the most common antioxidants in one's diet.
They write in a 2005 paper "Polyphenols: antioxidants and beyond" published in The American Journal of Clinical Nutrition that a series of redox-dependent reactions happens when polyphenols interact with receptors or enzymes.
Enzymes are proteins that are produced in cells.
During the protein interaction and transfer of electrons, oxygenase reactions are regulated in cells. As part of the process, molecular oxygen is catalyzed.
According to the National Institute of Aging, free radicals are molecules with unpaired electrons. Produced during metabolism, free radicals do not contain oxygen and damage cells.
The institute says that free radicals may be responsible for aging.

Containing oxidants and fatty acids, oil may slow aging and improve one's health.
Common types of oils : olive, fish, grape seed, sesame and soybean.
Olive oil: Contains polyphenols and also increase enzymes that block activation of carcinogens. Olive oil also helps with digestion and strengthens the omega-3 fatty acid's anti-inflammatory effects.
Fish oil: Fish coil contains docosahexaenoic acid and eicosapentaenoic acid. The omega-3 fatty acids lower triglycerides and slow the buildup of atherosclerotic plaques. That would address heart disease, which may develop as one ages.
Grape seed oil: High in unsaturated fats, grape seed oil can raise HDL cholesterol levels and improve one's heart health. Grape seed oil can also be found in moisturizers, which helps to repair skin. As one ages, skin can become dry and damaged.
Sesame oil: Along with ingestion, sesame oil can provide antioxidants through skin application.
Soybean oil: Soybean oil contains omega-6 and omega-3 fatty acids.
