I loved this recipe as soon as I read it. This is a recipe that I could make my own, I just made some slight changes and it was incredible. This is the first time I made this soup and it was a big hit in our home. Many times I would order this dish in restaurants and absolutely loved it. I used a stick of butter and 1 medium size onion.
Leftover cooked broccoli from Monday's night dinner.
2% milk was my milk of choice.
The soup was too chunky, I used a potato masher to break down the big chunks.
Since the soup was not as thick as I like it I added 1/2 c. dry mashed potato flakes.I added a tablespoon coarse black pepper for that extra bite,
I garnished with toast that was quartered and a couple of chunks of cheddar cheese that i placed in the center of the bowl.
