How to Make Ham and Asparagus Manicotti
Cook Manicotti shells according to package directions for the minimum cooking time. Melt 3 tablespoons of butter in a large frying pan and sauté onion and garlic until onion is transparent.Transfer onion and garlic to a large bowl and toss with asparagus, ham, and 1/4 cup of the Parmesan cheese. n the frying pan, melt the remaining 6 tablespoons of butter and stir in the flour. Do not allow the flour to brown. Whisk milk into the frying pan, over medium heat and allow it to come to a boil, whisking continuously until the sauce begins to thicken. Remove the pan from the heat and stir in the white pepper, tarragon, and the Swiss cheese. Mix 1/4 of the cheese sauce with the ham mixture. pread a small amount of the cheese sauce in the bottom of a 9X13 inch baking dish. Pour ¼ cup of water over the cheese sauce, in the baking dish. Fill the manicotti shells with the ham and cheese mixture and place shells in the baking dish. Pour remaining sauce over the manicotti shells. Bake covered manicotti for 50 minutes. Remove the ham and asparagus manicotti from the oven and let the dish rest 5 minutes before serving.
