Numerous cultivars of cherry tree exist, producing different-tasting fruit. Besides a variety in flavor, these trees also bear fruit at different times. Some are ready to harvest in spring, but some varieties aren't ready until summer. Does this Spark an idea?

Most cherries are ready to harvest by late May, but late-harvest cherries will make you wait until mid- to late June. For most cherry trees, the harvest window is slim, only a matter of weeks.

The Lambert is one type of late-harvest cherry tree. This tree with large, black cherries has a reputation of being one of the highest quality cultivars. Since it ripens late in the season, it is less susceptible to cracking than other cherries.

Other Types

Other late harvest cherries include the Stella, which is very similar to the Lambert, and the bright-red Sweetheart, which is crunchy rather than soft when ripe. Another late harvest type is the tart English Morello, which is used for cooking.
