Low Temperature and High Humidity

Idaho potatoes that are stored at temperatures from 45 to 48 degrees Fahrenheit with a humidity level of 95 percent may last for months without sprouting, according to the Idaho Potato official website. The site does say that most people won't be able to replicate these conditions in their home.

Dark and Cool Location

Idaho potatoes that are stored in a dark and cool location (for example, in a basement) may last for "a couple of weeks" without sprouting, according to the Idaho Potato site. If the dark and cool location also has a high humidity level, that time may be extended.

Over 55 Degrees Fahrenheit

Idaho potatoes that are stored in temperatures in excess of 55 degrees Fahrenheit are more susceptible to sprout. This is partially due to moisture loss that occurs at higher temperatures. Sprouting time in temperatures over 55 does vary but is generally less than a few weeks.
