The Origin of Espresso

Luigi Bezzera invented espresso in 1903, adding pressure to the normal coffee-making process to speed it along. The faster process made a much better cup of coffee because it reduced the negative aspects of prolonged brewing. A businessman by the name of Desidero Pavoni purchased the rights to the process in 1905 and used his wealth to bring the delicious brew to the rest of the world.

The first espresso makers used a manual pumping process, but by 1930, automatic methods came into existence that should have made manual pumps obsolete. Manual pumps persisted, even into the present day, despite the many problems associated with them. Traditional manual espresso machines require a steady hand to provide the right pressure to extract the right cup of coffee, and if the coffee grains are not precisely the right size, manual pumps can produce an inferior result.
