Days to Maturity

Depending on the type of purple potato variety, days to maturity will vary. A main season variety such as Purple Viking, for instance, requires 70 to 90 days to maturity, while a late season variety such as Michigan Purple can take 90 to 110 days to mature.
Color

Skin color is an essential aspect of a purple potato and the deeper the color is at the time of harvest, the better the chances are for it to retain an intense color during storage. Skin color begins to fade after harvest and in storage.

Harvesting Time

In general, potatoes are harvested after the vine of the plant dies. For early varieties, this is in the early to midsummer. Late potato varieties are ready for harvest in August or early September.
