Cooking foods using a totally wood fire is tricky. Burning wood is hard to manage and may impart so much smoke to the food that it is inedible. Starting with a small amount of wood gives the cook more control.
Wood Flavorings

To add a delicate smoky flavor to food, some cooks add wood chips or chunks to charcoal or gas grills. They often soak the chips in water before use to make them smoke more and burn more slowly, although some cooks prefer using dry wood. Hickory, apple wood and wood from other fruit trees are popular barbecue fire additives.

Chip and Chunk Placement

You can place wood pieces directly placed onto charcoal fires. To flavor foods cooked on gas grills, barbecuers commonly wrap wood chips in foil packets and place them on the heat dispersers to ignite the contents and create smoke.
