Substitute for Liquid Brown Sugar thumbnail
Use granulated brown sugar in place of liquid brown sugar.

Domino Sugar, America's largest sugar processor, once manufactured a liquid brown sugar product. No longer available for purchase, liquid brown sugar still appears in some old recipes, leaving cooks to find a suitable substitute. Does this Spark an idea?

  1. Granulated Brown Sugar

    • Liquid brown sugar's moisture content is around 25 percent. Therefore, a substitute can be made by mixing one part water with three parts brown sugar. To ensure that the brown sugar dissolves completely, heat the mixture over low heat, stirring frequently until blended. Let cool, then proceed with the recipe.

    Light or Dark?

    • Frequently interchanged in recipes, the choice of light or dark brown sugar depends on the flavor desired in the final product. Light brown sugar has a delicate taste with just a hint of molasses flavor. Dark brown sugar contains more molasses, resulting in a richer flavor and a darker color.

    Dark Corn Syrup

    • In most recipes, an equal measure of dark corn syrup can stand in for liquid brown sugar.
