Fructose is a natural sugar that comes from honey, fruits and vegetables. Granulated fructose normally comes from grapes, corn and other high sugar fruits. Melons and berries are also high in fructose.

  1. Structure

    • Fructose is a monosaccharide, meaning it has a single sugar molecule. Monosaccharides include glucose and galactose. Other names for fructose are fruit sugar, leavulose, and levulose.

    Glucose

    • The difference between fructose and glucose is that glucose is directly usable by the human body whereas fructose must be converted by the liver for use by the body. Fructose is lower in carbohydrates and sweeter than sucrose or glucose so less fructose can be used.

    Dieting

    • Fructose metabolizes slowly and is sometimes recommended for diabetics as it causes less of a glucose surge than regular sugar. As fructose is low in carbohydrates, fructose is sometimes used as a cane sugar replacement for weight control.
