    • Soups, a common first course, must be made with vegetable stock, even though some vegetarian soups actually contain chicken stock to boost flavor. When serving salad, add ingredients beyond simple greens like quinoa to add protein. Vegetarian appetizers such as hummus and black bean dip can be served with pita bread or tortilla chips.

    Entrees

    • Typical vegetarian dinner entrees include pasta made with meatless sauce, quiche, cabbage rolls, enchiladas and bean chili. You can also make "mock meat" dishes such as meat loaf and mashed potatoes, and veggie burgers and french fries.

    Dessert

    • Standard desserts are suitable for a vegetarian menu, although some vegetarians abstain from eating any foods that contain gelatin. Typical dessert options include fresh fruit, cakes, pies and puddings.
