A research chef is defined as a chef with expertise in the culinary arts and food science who works in food product development. Also called product development or food innovation chefs, research chefs develop new foods and products for restaurant chains and food manufacturing companies.

    • Certified research chefs are experienced research chefs who meet eligibility criteria in the education, food service experience, and research and development experience fields. In addition, candidates must also pass a certification exam to be qualified.

    • The Bureau of Labor Statistics does not collect data on research chefs. The Research Chefs Association conducted a salary study in 1999. According to it, earnings varied widely but many experienced chefs earned from $70,000 to $90,000 per year. Research chefs generally earn more than the average chef because of their higher level of culinary training and food science education.

    Salary of a Certified Research Chef

    • Although certified research chefs must meet a high level of criteria to be certified, there is no proven evidence that they receive a higher salary than research chefs who are not certified.
