The KitchenAid Professional 600 includes six speed settings: Stir is the lowest speed, and 10 is the highest. The KitchenAid Professional 600 owner's manual recommends only using the 2 setting when kneading a yeast-based bread dough. Using a setting higher or lower than 2 may result in the bread not rising properly. Specifically, using a setting that is too high may damage the mixer.

The KitchenAid Professional 600 stand mixer comes with a different type of dough hook than is seen in most mixers. It is spiral in shape and should only be used with this mixer. This spiral dough hook is more efficient than other dough hooks and kneads most yeast doughs in four minutes.

In a rapid-rise yeast bread recipe, after the initial mixing of dry ingredients and liquid (about two minutes with the bread hook), more flour is added to the mixture until the dough starts to "clean" the sides of the bowl. Add flour 1/2 cup at a time, and knead until the dough is smooth, elastic and clean from the bowl. This process should take about another two minutes.
