Ginger root is used to improve the flavor and odor of the food. The juice from fresh ginger may be used or whole slices may be added to the meal. Knowing how to handle and store ginger allows you to make the most of this spice in your kitchen. Does this Spark an idea?

  1. Storage

    • Do not place fresh ginger in the refrigerator as it will get moldy. Instead, store it at room temperature in a dark place. Alternately, leave peeled ginger in a container of dry sherry in the refrigerator. This can keep the ginger fresh and the wine can later be used in stir fry or salad dressings.

    Handling Ginger

    • When you want to use fresh ginger, peel the golden skin with a vegetable peeler, leaving behind the white flesh. After the hard peel is removed, you may juice, shred, grate, dice or slice the peeled root depending on what the recipe calls for.

    Freezing Ginger

    • When you have too much fresh ginger and you want to freeze some for long-term storage, peel the root and grate it entirely. Then spread a thin line of grated ginger onto a sheet of cellophane and roll it up, twisting it at the ends to keep it closed. Freeze the ginger and when it is called for, unwrap it and snap off the parts you want to use.
