One cup of mashed butternut squash contains about 2 grams of protein, 1 gram of fat and 18 grams of carbohydrates. In contrast, a sweet potato has roughly 2 grams of protein, less than 1 gram of fat and about 22 grams of carbohydrates. Squash is loaded with healthy fiber and a wealth of valuable vitamins.
The darker the color of the squash, the stronger the flavor. Make sure to select squash that has a strong healthy color and that is free from mold, bruising or other defects. Butternut squash is very hardy and will last a month or longer if stored in a cool dry place.
Although butternut squash is typically used for soup because of its unique texture, it is also good roasted, curried or pureed.
