Eba and efo, or efo riro, is a Nigerian dish. Efo riro is a rich soup made with vegetables, assorted meat and fish stock. It is accompanied by eba, which is made from cassava. Does this Spark an idea?

  1. Efo Riro

    • Although efo riro is known as vegetable soup and is prepared with leafy greens such as spinach, it is also prepared with anything from beef and goat to tripe and cow's foot, to chicken and seafood.

    Eba

    • Eba is made by sprinkling gari, which should be pounded into a fine powder, into boiling water and stirred until it's doughy. It is usually served with efo riro and fish or meat dishes.

    Gari

    • Gari is a granular flour made from cassava roots and is a popular West African food. A versatile food, gari can be enjoyed as a snack in cold water or prepared in hot water as eba.
