For the average African, starch is basically a mainstay in the daily diet. Mush made from millet and corn are made into grits, griddle cakes and flatbreads, which are popular across the continent. Depending on the region, some meals also contain meats.

South African residents live mainly on a starch-based diet, according to SallyBernstein.com. Diets in this region consist of cornmeal, sweet potato yams and a variety of greens. Foods are cooked with palm oil or coconut oil and cooks often use Indian and Malaysian spices, peanuts, chilies and tomatoes in their meal preparations.
Eastern Region

In the eastern region of Africa, starch-based foods also dominate the menu, with a few additions. Dishes in this region tend to be virtually free of meat, as many African people believe cows, goats and sheep are sacred. The average diets in this region contain lots of bananas, milk, sorghum and millet.

In western Africa, the majority of meals consumed contain either fish, chicken or other meats, which is often made into a stew. For seasoning, western African cooks use onions, yams and lots of chili oil, which makes for very spicy dishes. Meals are complimented by homemade breads and mush.
