Farmers grow baby corn in two ways.

Despite common assumptions that baby corn is only harvested from tiny corn plants, the vegetable comes from early harvest of immature corn plants that would eventually produce full-sized ears if left to grow. Special strains are now available that strictly produce baby corn. Does this Spark an idea?

  1. Sweet vs. Field Corn

    • Underdeveloped ears are harvested from either sweet corn, which is for human consumption, or field corn, which is mainly for animal feed. Growers pluck the tiny ears from the plants before sugar has formed in the kernels, so both types have the same flavor. Sweet corn is the easiest to remove from the corn stalks. Field corn seeds, however, are the less expensive option.

    Baby Corn vs. Regular Corn Plants

    • Although hybrid baby corn plants typically produce more ears per plant, regular corn plants produce both sizes. This eliminates the need to plant two separate corn crops.

    Considerations

    • Different corn varieties thrive in various types of soil. Before committing to one type, it is best to plant small test plots to determine their growth potential.
