    • While various myths account for the creation of the salad, most historians agree that it was created by Caesar Cardini in Tijuana in 1924. The story suggests that during a large rush at his restaurant, Cardini used leftover ingredients to create the salad combination.

    Original Preparation

    • Cardini combined romaine lettuce, garlic, croutons, Parmesan cheese, olive oil, hard boiled eggs and Worcestershire sauce in the original Caesar salad. Originally the dressing was poured on whole romaine leafs and eaten with the fingers. The original dressing was patented by Cardini in 1948, and continues to be sold under the name Cardini's Original Caesar Dressing Mix.

      Egg yolks provide the basis for Caesar dressing. Eggs are boiled for one minute. The yolks are then separated from the whites, and added to garlic, red wine vinegar, Dijon mustard, Worcestershire sauce, lemon juice, salt and pepper. The dressing is then tossed with a combination of romaine lettuce, croutons and Parmesan cheese.
